SPAGHETTI WITH BOLOGNESE SOUP
1 lb. ground beef
15 oz. whole tomatoes, chopped
15 oz. can tomato sauce
2 med. onions, chopped
5 garlic cloves, minced
6 or 7 lg. mushrooms, sliced
1 green pepper, sliced
2 tsp. oregano
2 tsp. basil
1 bay leaf
1/2 tsp. dry thyme
1/2 c. olive oil
1 lb. spaghetti, cooked
Parmesan cheese, grated
Extra virgin olive oil
INSTRUCTIONS
Heat a large skillet with a tablespoon of olive oil.
Add vegetables and heat for 5 minutes,.
Set aside.
In another skillet, brown the beef and drain off extra fat.
Add vegetables to ground beef and heat through.
Stir in tomatoes, sauce, and seasonings.
Bring to a boil and simmer for 25-30 minutes.
Place cooked spaghetti on plates and stir with a small amount
of olive oil and half cup of Parmesan cheese.
Top with sauce and serve.
